Zesty Grilled Vegetables

DruckansichtGrilled vegetables are a light and vitamin-rich gourmet alternative for the figure-conscious. Vegetables such as courgette, potatoes and tomatoes are wonderful as a side dish for sociable raclette evenings, and provide tasty variety on long dinner evenings.

Zutaten
- 2 potatoes
- 1 courgette
- 8 cherry tomatoes
- 1 Pepper
- 1 Aubergine
- 1 tbsp dried thyme
- 1 tbsp rosemary powder
- 1 tbsp organic lemon
- 2 tbsp olive oil
- Salt and pepper
- 2 sprigs rosemary (for garnish)
Anleitung
- First, peel the potatoes and cut into small potato wedges. Core the peppers and cut them into strips. Wash the courgette and tomatoes well and cut the courgette into slices about one centimetre thin. Also cut the aubergine into thin strips.
- Mix the thyme and rosemary along with the olive oil, a dash of lemon, salt and pepper in a bowl. Then add the vegetables and leave everything covered for 2 to 3 hours in the refrigerator, so that the spices are infused into the vegetables.
- Spread the delicious grilled vegetables on the ovenproof grill of your oven and let them crisp on the middle rack for about 25 minutes at 200 degrees Celsius. For the best results, turn the vegetables several times during the process. The vegetables are particularly delicious when cooked in the hot air fryer.
