DruckansichtYou can also bake small rolls, especially when it comes to rye bread. Schusterjungen, or shoemaker boys - that's what Berliners call hearty little rye bread rolls. In this recipe you will learn how you can bake the delicious German-style rolls in the VitAir yourself.

Zutaten
- 175 g rye flour
- 90 g wheat flour
- 30 g fresh yeast
- ½ tsp salt
- 175-180 ml water (lukewarm)
- Some water & flour (for the crust)
Anleitung
- First dissolve the yeast in a water-sugar mixture. Next sift the flour onto a work surface and hollow out a hole in it, into which you can pour the dissolved yeast. Knead the mixture slowly for about 10 minutes to a smooth dough. If you have a food processor, you can of course let the food processor take on some of the work and knead the dough for you.
- Let the dough rest covered for about 1 hour. The volume should have doubled afterwards. Then knead the dough well again for a few minutes.
- Form the dough into a roll and then cut it into 6 to 8 even parts, from which you can then form the Schusterjungen rolls. Let the rolls rest again until their volume has doubled.
- Brush the bread rolls with water and then dust with flour. Place the VitAir on the Grill program and let the roll bake at 200 degrees for about 20 minutes.
