Dried Fruit Wrapped in Bacon

- 6 prunes
- 6 dried apricots
- 1 packet of bacon strips
- 1 fresh fig
- 1 bunch of young dandelions
- 30 ml of white balsamic vinegar
- 70 ml olive oil
- ½ red onion
- salt & pepper
- Some honey
Anleitung
- First, wash the dandelion and let it drain, then pluck it into small pieces. Peel the onion and then cut into small cubes. Wash the fig and cut it into small cubes. Sauté the onion pieces in a little olive oil and add the fig after a short time. Deglaze everything with the balsamic vinegar. Stir in the rest of the oil and season the whole thing to taste with some honey as needed. Pour this hot mixture over the dandelion.
- Halve the bacon strips and divide them lengthwise. Place the dried fruit at the bottom of the bacon strips and then roll them firmly. Place them in the pan and put them on the grill of the VitAir. Place the VitAir on the Bake program and bake the bacon-wrapped fruit at 200 ° C for 8 minutes. Arrange the prunes and apricots wrapped in bacon with the salad and serve the appetizer while it is still warm.
- Tip: with its fine shoots, young dandelion is ideal for salad, as it is not as bitter as older dandelions. If your dandelion is a bit older, you can blanch it in boiling water with a little sugar, which makes it milder in flavour.
