If you like the combination sweet and salty, you should definitely try my cornbread muffins with honey. The typical American cornmeal pastry blends these contrasting flavours in an irresistible combination. In the southern part of the US, cornbread is often served as a side dish for hearty meals. When it gets colder outside, I prefer to eat these muffins with a soothing, creamy hot soup.

Anleitung


  1. Prepare by preheating your oven to 200 degrees and lining your muffin tray with muffin liners. Of course you can also bake the cornbread muffins in the VitAir - without unnecessary preheating.

    For the batter of the cornbread muffins, add flour, cornmeal, sugar, baking soda and salt to your food processor and let the machine mix at low speed. Then beat the eggs in the bowl with the dry ingredients, add milk, honey and butter and mix everything into a smooth batter.
  2. When the batter is ready, distribute it evenly between the muffin cups and push the tray onto the middle rail of the oven. After about 20 minutes, the cornbread muffins will be baked golden brown. Now you just have to let them cool down a bit before you can enjoy the sweet and savoury cornbread muffins with wonderfully hearty food. If you like them a little sweeter, you can also spread the muffins with jam or fruit.
